Instructions
Prepare the dressing by whisking together olive oil, lemon juice, basil, thyme, salt, and pepper.
Cook the shrimp in boiling water until pink and opaque, about 3-4 minutes, then drain and let cool.
In a large bowl, combine the cooked shrimp, cherry tomatoes, cucumber, red onion, avocado, capers, and feta cheese.
Pour the dressing over the salad and toss gently to combine.
Serve immediately or chill for 30 minutes before serving.
Notes
For extra flavor, add a sprinkle of oregano or fresh parsley.
