A fresh and vibrant Greek-inspired shrimp salad perfect for a light lunch or dinner.

Ingredients

Dressing

  • 0.25 cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons fresh basil (chopped)
  • 1 tablespoon fresh thyme (snipped)
  • to taste salt and freshly ground black pepper salt and pepper

Shrimp

  • 1.5 lb raw shrimp (peeled and deveined) (large - about 15-20 count per pound)

Vegetables and toppings

  • 5 oz yellow cherry tomatoes (sliced in half)
  • 5 oz red cherry tomatoes (sliced in half)
  • 1 large cucumber (quartered)
  • 1/3 cup red onion (sliced)
  • 1 large avocado (peeled, cored, and diced)
  • 3 tablespoons capers
  • 4 oz Feta cheese

Instructions 

  • Prepare the dressing by whisking together olive oil, lemon juice, basil, thyme, salt, and pepper.
  • Cook the shrimp in boiling water until pink and opaque, about 3-4 minutes, then drain and let cool.
  • In a large bowl, combine the cooked shrimp, cherry tomatoes, cucumber, red onion, avocado, capers, and feta cheese.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or chill for 30 minutes before serving.

Notes

For extra flavor, add a sprinkle of oregano or fresh parsley.
