A moist, flavorful banana zucchini bread that's grain-free and perfect for a healthy snack or breakfast.

extra ripe bananas (~225g, heavily spotted peels)

shredded zucchini
(squeeze out excess moisture)

honey (can substitute maple syrup)

Dry ingredients

almond meal (also called almond flour)

powdered peanut butter (PB2 or similar brand)

Instructions
Preheat oven to 350°F (175°C). Line a loaf pan with parchment and spray lightly.
Squeeze excess moisture from shredded zucchini.
Blend bananas, zucchini, egg, honey, and vanilla until smooth.
Mix dry ingredients, then fold wet mixture into dry. Stir in chocolate chips.
Pour batter into pan, top with pecans and extra chips, then bake 45-55 mins.
Cool in pan 30 mins, then cool completely before slicing.
Notes
Ensure zucchini is well squeezed to prevent sogginess.
