Instructions
Preheat oven to 160°C Fan / 180°C. Line a 9x9 inch baking tin with non-stick paper.
Mix caster and light brown sugars with cooled melted butter until combined. Let sit briefly to stiffen.
Add egg and vanilla, mix until smooth. Then blend in peanut butter until fully incorporated.
Stir in gluten-free flour, cornflour, bicarbonate of soda, and xanthan gum (if using). Mix until combined. Fold in chocolate chips, Reeses chips, and chopped peanut butter cups.
Spoon mixture into prepared tin, press evenly, top with extra chopped peanut butter cups and chocolate chips. Bake for 18-22 minutes, then cool before slicing.
