Delight in these soft, chewy, gluten-free peanut butter cookie bars that are perfect for a quick, dairy-free treat with optional vegan adaptations.

Ingredients

Dry ingredients

  • 100 g caster sugar
  • 100 g light brown sugar
  • 150 g gluten free plain flour
  • 1 tbsp cornflour (cornstarch)

Wet ingredients

  • 140 g butter (melted)
  • 250 g peanut butter ((smooth or crunchy, preferably creamy))
  • 1 egg egg
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp xanthan gum (optional)

Add-ins

  • 75 g chocolate chips
  • 50 g Reeses chips (or add more chocolate chips if unavailable)
  • 90 g Reeses Peanut Butter Cups (chopped)

Instructions 

  • Preheat oven to 160°C Fan / 180°C. Line a 9x9 inch baking tin with non-stick paper.
  • Mix caster and light brown sugars with cooled melted butter until combined. Let sit briefly to stiffen.
  • Add egg and vanilla, mix until smooth. Then blend in peanut butter until fully incorporated.
  • Stir in gluten-free flour, cornflour, bicarbonate of soda, and xanthan gum (if using). Mix until combined. Fold in chocolate chips, Reeses chips, and chopped peanut butter cups.
  • Spoon mixture into prepared tin, press evenly, top with extra chopped peanut butter cups and chocolate chips. Bake for 18-22 minutes, then cool before slicing.

Notes

Ensure all ingredients are dairy-free for vegan options. Adjust baking time for softer or firmer bars.
