Enjoy these crispy, gluten-free mini tacos filled with flavorful ground turkey and dairy-free cheese, perfect for a quick and tasty meal or snack.

Ingredients

Meat

  • 1 lb lean ground turkey
  • 1 tbsp homemade gluten-free taco seasoning

Tortillas

  • 30 pieces gluten-free tortillas
  • 3 tbsp avocado oil
  • 8 oz dairy-free cheese alternative, shredded

Optional toppings

  • fresh cilantro, diced tomatoes, avocado slices, lime wedges, gluten-free salsa (Optional toppings for serving)

Instructions 

  • Preheat oven to 425°F (220°C). Cook ground turkey with seasoning until browned.
  • Wrap tortillas in a damp cloth and microwave 30 seconds to soften. Cut out mini tortillas with a 3-inch cutter.
  • Brush mini tortillas with avocado oil, place on a baking sheet, and add shredded cheese in the center.
  • Bake for 2 minutes, fold in half to form tacos, then bake another 8-10 minutes until crispy.
  • Serve hot with optional toppings like cilantro, tomatoes, avocado, lime, and salsa.

Notes

Ensure tortillas are fresh for best results.
