Ingredients

Dough

  • 3 large eggs
  • 1 large egg yolk
  • 1 teaspoon salt
  • 1-2 Tablespoons water (add more if needed)
  • 2 cups gluten free flour (plus more for rolling)

Instructions 

  • Whisk eggs, egg yolk, salt, and 1 Tablespoon water in a bowl.
  • Mix flour in a large bowl, create a well, then pour in egg mixture and gradually incorporate.
  • Knead dough until mostly smooth, adding more water if crumbly. Roll out thinly on floured surface and cut into noodles.
  • Gently toss noodles with flour, then cook in boiling broth or water for 8-12 minutes until al dente.
  • Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.

Notes

Work quickly to prevent dough from drying out, and add water gradually for best texture.
