Instructions
Whisk eggs, egg yolk, salt, and 1 Tablespoon water in a bowl.
Mix flour in a large bowl, create a well, then pour in egg mixture and gradually incorporate.
Knead dough until mostly smooth, adding more water if crumbly. Roll out thinly on floured surface and cut into noodles.
Gently toss noodles with flour, then cook in boiling broth or water for 8-12 minutes until al dente.
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
Notes
