This moist and flavorful gluten-free banana bread is perfect for a quick snack or breakfast, using ripe bananas and simple ingredients.

Ingredients

  • 4 large ripe bananas (mashed) (about 1.5 cups)
  • 2 large eggs
  • 1/4 cup butter (melted and cooled) (57g)
  • 2 tsp pure vanilla extract
  • 1 2/3 cups gluten-free all-purpose flour (200g)
  • 1/2 cup coconut sugar (60g)
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 tsp ground cinnamon (optional)
  • 2/3 cup chocolate chips (optional) (85g)

Instructions 

  • Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • Mash bananas, then whisk in eggs, vanilla, and cooled melted butter.
  • Mix dry ingredients: flour, baking soda, salt, coconut sugar, and cinnamon.
  • Combine wet and dry mixtures, fold in chocolate chips if using, then pour into pan.
  • Bake for 50-60 minutes, cool for 30 minutes before slicing.

Notes

For best results, use ripe bananas and do not overmix the batter.
