A moist and flavorful gluten-free banana bread perfect for breakfast or a snack. Easy to make with simple ingredients and no gluten required.

Ingredients

Dry ingredients

  • 1 cup 1:1 gluten-free flour (recommended: King Arthur Flour Measure for Measure)
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon

Wet ingredients

  • 1 cup mashed banana (about 2-3 medium ripe bananas)
  • 0.33 cup vegetable or avocado oil
  • 0.5 cup granulated sugar
  • 0.25 cup light brown sugar (lightly packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  • Mix dry ingredients in a bowl. Mash bananas and combine with wet ingredients.
  • Fold dry ingredients into wet mixture until just combined.
  • Pour batter into prepared pan and bake for 55-60 minutes until a toothpick comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for best flavor and sweetness.
