Ingredients

Bananas

  • 3 pieces ripe bananas, mashed
  • 2 large eggs
  • 1/3 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup brown sugar or coconut sugar
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • Mix mashed bananas, eggs, melted coconut oil, and vanilla.
  • Add baking soda, salt, and cinnamon; stir well.
  • Fold in flour and sugar; mix until just combined. Add nuts or chocolate chips if desired.
  • Pour batter into pan, bake for 50-60 minutes. Cool before serving.

Notes

Use ripe bananas for best flavor and sweetness.
