Delicious and fluffy gluten-free pancakes made with almond flour, perfect for a healthy breakfast.

Ingredients

Dry ingredients

  • 3 cups superfine blanched almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 2 tablespoons granulated sugar

Wet ingredients

  • 4 large eggs
  • cup milk
  • 2 teaspoons lemon juice ((Sub white vinegar.))
  • 1 teaspoon pure vanilla extract
  • ¼ cup butter (melted and cooled)

Instructions 

  • In a bowl, combine almond flour, baking powder, baking soda, salt, and sugar.
  • In another bowl, whisk eggs, milk, lemon juice, vanilla, and melted butter.
  • Pour wet ingredients into dry ingredients and mix until just combined.
  • Heat a non-stick skillet over medium heat and pour batter to form pancakes.
  • Cook until bubbles form, then flip and cook until golden brown.

Notes

For extra fluffiness, let the batter rest for 5 minutes before cooking.
