Instructions
Pat the chicken dry, season with salt and pepper, and dry brine for 2 hours or overnight.
Preheat oven to 425°F (220°C). Mix olive oil, herbs, and garlic; season with salt and pepper.
Place chicken in a baking dish with halved garlic and lemon, coat with herb mixture.
Roast for 40-50 minutes until internal temperature reaches 165°F (74°C) and skin is crispy.
Rest for 15 minutes, then carve and serve with pan juices, lemon, and roasted garlic.
Notes
For extra crispiness, dry the chicken skin thoroughly before roasting.
