Ingredients

  • 4 to 5 pounds whole spatchcocked chicken
  • to taste kosher salt and freshly ground black pepper
  • 0.25 cup extra-virgin olive oil
  • 1 tablespoon dried parsley
  • 1 tablespoon dried thyme
  • 1 tablespoon fresh rosemary (finely chopped)
  • 4 cloves garlic (minced or grated)
  • 1 head garlic (halved)
  • 1 large lemon (halved)

Instructions 

  • Pat the chicken dry, season with salt and pepper, and dry brine for 2 hours or overnight.
  • Preheat oven to 425°F (220°C). Mix olive oil, herbs, and garlic; season with salt and pepper.
  • Place chicken in a baking dish with halved garlic and lemon, coat with herb mixture.
  • Roast for 40-50 minutes until internal temperature reaches 165°F (74°C) and skin is crispy.
  • Rest for 15 minutes, then carve and serve with pan juices, lemon, and roasted garlic.

Notes

For extra crispiness, dry the chicken skin thoroughly before roasting.
