Delicious and easy garlic butter noodles packed with fresh vegetables and rich flavors, perfect for a quick weeknight dinner.

Ingredients

Vegetables

  • 1 piece zucchini
  • 1 piece bell pepper
  • ½ head cauliflower

Pasta

  • 1 1/2 tablespoons olive oil
  • to taste Salt and pepper
  • 1 teaspoon Italian seasoning (garlic powder, onion powder)
  • 1 pound pasta
  • 8 tablespoons butter ((1/2 cup))
  • 6 cloves garlic (finely minced)

Optional toppings

  • to taste Parmesan or other cheese (fresh herbs)
  • a pinch Salt and pepper (for topping)

Instructions 

  • Cook pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  • Add chopped zucchini, bell pepper, and cauliflower. Sauté until vegetables are tender.
  • Stir in cooked pasta, butter, Italian seasoning, salt, and pepper. Toss to combine and heat through.
  • Serve topped with Parmesan or fresh herbs if desired.

Notes

Use salted butter to reduce added salt; adjust seasoning accordingly.
