Ingredients

Leafy greens

  • 1 bag leafy greens

Cherry tomatoes

  • 1 cup cherry tomatoes, halved

Cucumber

  • 1 cucumber cucumber, sliced

Red onion

  • 1 small red onion red onion, thinly sliced

Apple cider vinegar

  • 1 tbsp apple cider vinegar

Extra virgin olive oil

  • 3 tbsp olive oil

Dijon Mustard

  • 1/2 tsp Dijon Mustard

Salt

  • 1/2 tsp salt

Black pepper

  • 1/2 tsp black pepper

Instructions 

  • Combine leafy greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  • Whisk together vinegar, olive oil, Dijon mustard, salt, and pepper in a separate bowl.
  • Drizzle dressing over salad and toss. Serve immediately.
