1.5cupscanned corn kernels(drained)
1mediumjalapeño pepper(seeded and finely diced)
1smallred bell pepper(seeded and finely diced)
3green onionsgreen onions(finely sliced)
0.25cupfresh cilantro(finely chopped)
1tablespoontaco seasoning
0.5teaspoonground cumin
9.75ouncesChili Cheese Fritos(reserving a handful for topping)
0.5cupsour cream
0.5cupmayonnaise
0.25cupfresh lime juice(about 2 limes)
2tablespoonschipotle sauce(from a can of chipotles in adobo, just the sauce)
Instructions
Combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin in a large bowl. Toss to combine.
Whisk together sour cream, mayonnaise, lime juice, and chipotle sauce in a medium bowl to make the dressing.
Pour the dressing over the cabbage mixture and gently stir to coat.
Add most of the Fritos, gently mixing to combine.
Top with the reserved handful of Fritos just before serving for crunch.
Serve immediately for best texture.
