A refreshing and vibrant salad combining crisp cucumbers, juicy cherry tomatoes, and creamy mozzarella, all drizzled with a flavorful dressing.
Ingredients
Dressing

Salad

cucumber
peeled, fork-scored, and thinly sliced, then diced

cherry tomatoes, cut into quarters

Instructions
Mix olive oil, balsamic vinegar, oregano, basil, salt, and pepper in a bowl. Set aside.
Peel and fork-score the cucumber, then slice and dice it. Place in a bowl.
Add quartered cherry tomatoes and diced red onion to the cucumber.
Add mozzarella to the bowl and mix all ingredients.
Pour the marinade over the salad and mix well. Let sit for 10 minutes before serving.
Notes
For added flavor, let the salad sit longer before serving.
