A refreshing and vibrant salad combining crisp cucumbers, juicy cherry tomatoes, and creamy mozzarella, all drizzled with a flavorful dressing.

Ingredients

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 pinch salt
  • 1 pinch pepper

Salad

  • 1 cucumber peeled, fork-scored, and thinly sliced, then diced
  • 1.5 cups cherry tomatoes, cut into quarters
  • 8 oz fresh mozzarella
  • ½ large red onion, chopped into small pieces
  • optional fresh basil leaves

Instructions 

  • Mix olive oil, balsamic vinegar, oregano, basil, salt, and pepper in a bowl. Set aside.
  • Peel and fork-score the cucumber, then slice and dice it. Place in a bowl.
  • Add quartered cherry tomatoes and diced red onion to the cucumber.
  • Add mozzarella to the bowl and mix all ingredients.
  • Pour the marinade over the salad and mix well. Let sit for 10 minutes before serving.

Notes

For added flavor, let the salad sit longer before serving.
