Ingredients

Grains

  • 4 cups couscous

Produce

  • 1 ripe avocado avocado (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumbers (chopped)

Dairy & Cheese

  • 1/2 cup feta cheese

Herbs & Seasonings

  • 1/4 cup cilantro (chopped)
  • 1 tsp salt (more to taste)
  • 1 lime lime juice
  • 1/4 cup avocado oil
  • 2 tsp carne asada seasoning (more to taste)

Instructions 

  • Cook couscous according to package instructions; rinse under cold water.
  • Prepare and add chopped avocado, cherry tomatoes, cucumbers, feta, and cilantro to a large bowl.
  • Mix vinaigrette with lime juice, avocado oil, salt, and seasoning; drizzle over salad and toss gently.

Notes

Feel free to add more seasoning or herbs for extra flavor.
