A comforting baked dish combining tender chicken, flavorful French onion soup, and cheesy goodness, perfect for a hearty family meal.

Ingredients

Vegetables

  • 1 small yellow onion (thinly sliced)
  • 10.5 ounces can Campbell’s French Onion Soup
  • 14.5 ounces can chicken or beef broth (regular or low-sodium)
  • 1 1/2 cups long grain rice (rinsed and drained)
  • 1/4 cup butter (cut into slices)
  • 2-2 1/2 pounds boneless, skinless chicken breasts or thighs (1/2-inch thick)
  • 1 1/2 cups shredded cheese (mozzarella or Italian blend)
  • 1 ounce packet Lipton Onion Soup mix
  • 1 cup French’s Crispy Fried Onions

Instructions 

  • Preheat oven to 350°F (175°C).
  • In a 13x9-inch baking dish, whisk together sliced onion, French onion soup, broth, and rice.
  • Distribute butter on top, add chicken, then sprinkle cheese and onion soup mix.
  • Cover with foil and bake for 1 hour 15 minutes, then remove foil, add fried onions, and bake 15 more minutes.
  • Ensure chicken reaches 165°F (74°C) internal temperature before serving.

Notes

For extra flavor, let the casserole rest for 5 minutes before serving.
