Ingredients

Protein

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder

  • 2 cups cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels
  • ½ cup salsa
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped red onion
  • 1 avocado sliced
  • for serving Lime wedges

Instructions 

  • Toss shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  • Cook shrimp in a skillet over medium-high heat for 2-3 minutes per side until pink and opaque.
  • Layer cooked rice in bowls, then add black beans and corn.
  • Top with cooked shrimp, salsa, cilantro, red onion, and avocado slices.
  • Serve with lime wedges for squeezing.
