Ingredients

Protein

  • 2 pieces salmon fillets (about 6 ounces each)
  • 2 tablespoons Cajun seasoning

Grains

  • 1 cup brown rice
  • 2 cups vegetable broth (or water)

Vegetables

  • 1 red bell pepper diced red bell pepper
  • 1 cup corn (frozen or fresh)
  • 1 cup black beans (rinsed and drained)
  • 1 tablespoon olive oil

Garnishes

  • to taste Salt and pepper
  • for garnish Fresh cilantro
  • for serving Lime wedges

Instructions 

  • Season salmon fillets with Cajun seasoning.
  • Cook rice in broth for 45 minutes, then let rest for 10 minutes.
  • Sauté diced bell pepper in olive oil, add corn and black beans, cook until heated.
  • Cook salmon in skillet 4-5 minutes per side until flaky and golden.
  • Assemble bowls with rice, vegetables, salmon; garnish with cilantro and lime.
