A quick and delicious dish combining tender chicken, flavorful honey BBQ sauce, and fluffy rice for a satisfying meal.

Ingredients

Protein

  • 1.5 lb boneless skinless chicken breasts

Grains

  • 1.5 cups long-grain white rice (uncooked)

Broth & Sauces

  • 3 cups chicken broth
  • cup honey
  • ½ cup BBQ sauce
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1.5 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp black pepper
  • ¾ tsp salt
  • ½ tsp chili flakes (optional)
  • ¼ cup green onions, sliced
  • 2 tbsp fresh parsley or cilantro, chopped
  • 1 tbsp sesame seeds (optional)

Instructions 

  • Cook rice in chicken broth until tender, then fluff and set aside.
  • Mix honey, BBQ sauce, soy sauce, vinegar, garlic, paprika, onion powder, pepper, chili flakes, and salt to make the sauce.
  • Sear chicken in oil until golden, then simmer with sauce until cooked and sticky.
  • Rest, slice or cube chicken, then toss in sauce and serve over rice. Garnish with green onions, herbs, and sesame seeds.

Notes

For extra flavor, marinate chicken beforehand or add a squeeze of lime before serving.
