A vibrant and healthy salad combining crunchy vegetables, protein-rich edamame, and a flavorful sesame ginger dressing.

Ingredients

Protein

  • 12 oz Frozen Shelled Edamame (thawed)

Grains

  • 1 cup Uncooked Quinoa (rinsed)

Vegetables

  • 4 cups Napa Cabbage (thinly sliced)
  • 2 cups Red Cabbage (thinly sliced)
  • 2 carrots Carrots (shredded)
  • 1 red bell pepper Red Bell Pepper (finely diced)
  • 4 green onions Green Onions (thinly sliced)
  • 1/2 cup Fresh Cilantro (chopped)
  • 1/2 cup Roasted Peanuts (chopped)

Toppings

  • 1 cup Crispy Wonton Strips (for topping)

Dressing

  • 1/3 cup Soy Sauce (or tamari for gluten-free)
  • 1/4 cup Rice Vinegar
  • 2 tbsp Toasted Sesame Oil
  • 2 tbsp Avocado Oil (or other neutral oil)
  • 2 tbsp Honey (or maple syrup)
  • 1 tbsp Fresh Ginger (minced)
  • 2 cloves Garlic (minced)

Instructions 

  • Cook the quinoa, then cool on a baking sheet.
  • Combine sliced vegetables, edamame, green onions, and cilantro in a large bowl.
  • Whisk dressing ingredients until combined.
  • Add cooled quinoa and peanuts to the bowl, then toss with half the dressing.
  • Top with crispy wonton strips before serving.

Notes

For extra crunch, add more wonton strips just before serving.
