A moist and flavorful zucchini spice bread perfect for a quick snack or breakfast, combining warm spices with grated zucchini.

Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves (optional)

Wet ingredients

  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Main ingredient

  • 1.5 cups grated zucchini (about 1 medium zucchini)
  • 0.5 cup chopped walnuts or pecans (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  • Mix dry ingredients in a bowl. In another bowl, combine wet ingredients.
  • Gradually add dry to wet, mixing gently. Fold in zucchini and nuts.
  • Pour batter into pan and bake for 50-60 minutes. Cool before slicing.

Notes

For added flavor, sprinkle with a little extra cinnamon before baking.
