Olive oil

lean ground beef (organic and grass-fed, if possible)

Instructions
Gather and prep all ingredients.
Heat olive oil in a large pot, sauté onions, celery, carrots, and parsnip with salt and pepper for 3-4 minutes.
Add ground beef, cook until no longer pink, then stir in garlic, Italian seasoning, and paprika.
Add potatoes, diced tomatoes, and broth; simmer for 22-24 minutes until potatoes are tender.
Off heat, stir in kale, green beans, peas, and parsley. Serve hot.
Notes
For extra flavor, drizzle with a little olive oil before serving.
