Easy Vegetable Beef Soup

A hearty and nutritious soup combining tender vegetables and lean ground beef, perfect for a comforting meal.

Ingredients

Olive oil

  • 1 medium white onion, diced
  • 3 ribs celery, diced
  • 3 medium carrots, peeled and diced
  • 1 large parsnip, peeled and diced

Salt

Black pepper

  • 1 pound lean ground beef (organic and grass-fed, if possible)
  • 6 cloves garlic, pressed through garlic press
  • 1.5 teaspoons Italian seasoning
  • 1 teaspoon paprika (heaping)
  • 2 small russet potatoes, peeled and cut into small cubes
  • 1 28 ounce can diced tomatoes with juices
  • 6 cups beef broth or beef stock
  • 3 heaping cups chopped kale (or spinach)
  • 1 cup frozen French-style green beans
  • 0.5 cup frozen green peas
  • 2 tablespoons chopped flat-leaf parsley

Instructions 

  • Gather and prep all ingredients.
  • Heat olive oil in a large pot, sauté onions, celery, carrots, and parsnip with salt and pepper for 3-4 minutes.
  • Add ground beef, cook until no longer pink, then stir in garlic, Italian seasoning, and paprika.
  • Add potatoes, diced tomatoes, and broth; simmer for 22-24 minutes until potatoes are tender.
  • Off heat, stir in kale, green beans, peas, and parsley. Serve hot.

Notes

For extra flavor, drizzle with a little olive oil before serving.
