Ingredients

Rice

  • 1 cup long-grain white rice

Meat

  • 1 lb ground beef or turkey

Seasoning

  • 1 oz taco seasoning (1 packet)

Vegetables

  • 1 medium bell pepper, diced
  • 1 cup corn (canned or frozen)

Beans

  • 1 can (15 oz) black beans, rinsed

Toppings

  • 1 cup salsa of your choice
  • 1 cup shredded cheddar cheese

Instructions 

  • Cook rice according to package instructions.
  • Brown ground meat in a skillet for 5 minutes; drain excess fat.
  • Add taco seasoning and water; simmer for 3 minutes.
  • Stir in bell pepper, corn, and beans; heat for 3 minutes.
  • Mix cooked rice into the meat and veggie mixture.
  • Serve bowls topped with salsa and cheese.

Notes

You can customize toppings with sour cream, avocado, or cilantro for extra flavor.
