A quick and delicious homemade chicken fried rice perfect for a satisfying meal.

Ingredients

Rice and Chicken

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs beaten eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 3 green onions sliced green onions
  • to taste Salt and pepper

Instructions 

  • Heat sesame oil in a large pan over medium heat.
  • Add vegetables and cook until tender.
  • Push vegetables aside and scramble eggs until cooked.
  • Add chicken and rice, toss to combine.
  • Pour soy sauce, season with salt and pepper, stir-fry for 3-5 minutes.
  • Garnish with green onions before serving.

Notes

Use day-old rice for best results to prevent clumping.
