A comforting classic made simple with hearty ground beef and creamy mashed potatoes.

Instructions
Heat olive oil in a large skillet over medium heat. Add diced onion, celery, and minced garlic; cook until softened.
Add ground beef and cook until browned. Stir in flour, tomato paste, and thyme; cook for 2 minutes.
Pour in chicken broth and gravy; simmer until thickened. Season with salt and pepper.
Mix in frozen vegetables and cook for 5 minutes. Transfer mixture to a baking dish.
Spread mashed potatoes evenly over the meat mixture. Bake at 375°F (190°C) for 20 minutes until golden.
Notes
You can prepare the mashed potatoes ahead of time for quicker assembly.
