A comforting classic made simple with hearty ground beef and creamy mashed potatoes.

Ingredients

  • 1 Tablespoon olive oil
  • 0.75 cup yellow onion (finely diced)
  • 1 rib celery (finely diced)
  • 2 cloves garlic (minced)
  • 1 lb. ground beef (I used 85% lean)
  • 2 Tablespoons flour
  • 1 Tablespoon tomato paste
  • ½ teaspoon dried thyme
  • ½ cup chicken broth
  • 1 cup brown gravy (see notes)
  • Salt/Pepper Salt/Pepper
  • 1 cup frozen mixed vegetables
  • 3 cups mashed potatoes

Instructions 

  • Heat olive oil in a large skillet over medium heat. Add diced onion, celery, and minced garlic; cook until softened.
  • Add ground beef and cook until browned. Stir in flour, tomato paste, and thyme; cook for 2 minutes.
  • Pour in chicken broth and gravy; simmer until thickened. Season with salt and pepper.
  • Mix in frozen vegetables and cook for 5 minutes. Transfer mixture to a baking dish.
  • Spread mashed potatoes evenly over the meat mixture. Bake at 375°F (190°C) for 20 minutes until golden.

Notes

You can prepare the mashed potatoes ahead of time for quicker assembly.
