A simple and flavorful one-pan meal featuring tender chicken breasts roasted with sweet potatoes and Brussels sprouts, glazed with honey Dijon sauce.

Ingredients

Protein

  • 1.5 lbs boneless skinless chicken breasts (about 3–4 pieces)

Oil

  • 2 tbsp olive oil (divided)

Sweeteners

  • 3 tbsp honey

Condiments

  • 2 tbsp Dijon mustard

Garlic

  • 2 cloves garlic cloves (minced)

Vegetables

  • 1 lb Brussels sprouts (trimmed and halved)
  • 2 medium sweet potatoes (peeled and cut into 1-inch cubes)

Seasonings

  • 0.5 tsp salt (or to taste)
  • 0.25 tsp black pepper
  • 0.5 tsp smoked paprika (optional)
  • 1 tsp fresh rosemary or thyme (chopped (optional))
  • 1 tbsp fresh parsley (chopped (for garnish))

Instructions 

  • Preheat oven to 400°F (200°C). Toss chicken and vegetables with half the olive oil and seasonings.
  • Mix honey, Dijon mustard, and minced garlic to make the glaze.
  • Arrange chicken and vegetables on a sheet pan, brush with the honey Dijon glaze.
  • Roast for 20-25 minutes until chicken is cooked through and vegetables are tender.
  • Garnish with chopped parsley before serving.

Notes

For extra flavor, add a sprinkle of smoked paprika or fresh herbs.
