Instructions
Preheat oven to 400°F (200°C). Toss chicken and vegetables with half the olive oil and seasonings.
Mix honey, Dijon mustard, and minced garlic to make the glaze.
Arrange chicken and vegetables on a sheet pan, brush with the honey Dijon glaze.
Roast for 20-25 minutes until chicken is cooked through and vegetables are tender.
Garnish with chopped parsley before serving.
Notes
For extra flavor, add a sprinkle of smoked paprika or fresh herbs.
