This creamy and crunchy no-bake pie combines the rich flavor of Lotus Biscoff cookies with a smooth cream cheese filling, perfect for a quick dessert.

Ingredients

Crust

  • 200 g Lotus Biscoff biscuits
  • 100 g melted butter

Filling

  • 200 g cream cheese (room temperature)
  • 1 cup whipping cream (cold)
  • ½ cup powdered sugar
  • ½ cup Lotus Biscoff

Instructions 

  • Crush the Biscoff biscuits and mix with melted butter to form the crust. Press into a pie dish and refrigerate for 10 minutes.
  • In a bowl, beat the cream cheese until smooth. In a separate bowl, whip the cold cream with powdered sugar until stiff peaks form.
  • Fold the whipped cream into the cream cheese, then stir in crushed Biscoff cookies.
  • Pour the filling over the crust and smooth the top. Chill in the refrigerator for at least 4 hours before serving.

Notes

For a firmer pie, let it chill overnight.
