A vibrant and flavorful pasta salad perfect for picnics and gatherings, combining fresh ingredients with a tangy Italian dressing.

Ingredients

Pasta

  • 12 oz tri-color rotini
  • 2 cups cherry tomatoes, halved (about 2 cups, adjust to taste)
  • 1 cup summer sausage, julienned
  • 1 cup fresh mozzarella pearls
  • 1/2 cup Italian green olives (Castelvetrano)
  • 1/2 cup red onion, finely diced
  • 1/2 cup sliced peperoncini (optional)
  • 1/4 cup shredded Parmesan, freshly grated
  • 1 cup Italian dressing, or added to taste

Garnish

  • Parsley/Basil for garnish

Instructions 

  • Cook the rotini in salted boiling water until al dente (7-9 minutes). Drain and rinse with cold water.
  • In a large bowl, combine the cooked pasta with cherry tomatoes, sausage, mozzarella, olives, red onion, and peperoncini.
  • Stir in the Italian dressing and toss to combine. Chill in the fridge if preparing in advance.
  • Before serving, garnish with fresh parsley or basil and serve cold.

Notes

For extra flavor, let the salad sit in the fridge for a few hours before serving.
