This vibrant pasta salad is packed with Italian flavors and is perfect for gatherings or a quick meal.
Ingredients
Pasta

dry rotini pasta
(or your favorite short pasta)
Meats

hard salami, chopped
(or ¾ cup presliced)

(or ½ cup presliced)
Vegetables

canned artichoke hearts, drained & quartered

cherry tomatoes, halved

olives, pitted & halved
(kalamata, green or a mixture of the two)

pepperoncini, sliced

mozzarella pearls

red onion, sliced thin

fresh basil, sliced thin
Dressing
½
cup
olive oil

red wine vinegar

garlic, minced

italian seasoning

salt & black pepper, to taste
Instructions
Cook the pasta according to the package's directions, then drain and cool completely.
Whisk the vinaigrette ingredients together and chill in the refrigerator.
Prepare the salad ingredients by cutting the salami, pepperoni, and tomatoes, and slicing the olives, red onion, and basil.
Add the cooled pasta to a large bowl with the other ingredients and toss with dressing.
Serve with shredded parmesan and extra basil if desired.
Notes
Chill the salad for 30 minutes for enhanced flavor.
