  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 5 tablespoons unsalted butter (melted)
  • 1 1/4 cups all-purpose flour
  • 2/3 cup light brown sugar (dark works too)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup full fat sour cream
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  • Mix sugar, flour, cinnamon, baking powder, baking soda, and salt in a bowl.
  • In a separate bowl, whisk eggs, sour cream, vanilla, and melted butter.
  • Combine wet and dry ingredients until just mixed, then fill muffin cups.
  • Prepare streusel topping with butter, brown sugar, flour, and cinnamon; sprinkle over muffins.
  • Bake for 20 minutes or until golden brown. Cool before serving.

Notes

For a richer flavor, use dark brown sugar in the streusel.
