  • 3 cups cooked chicken, shredded or chopped (rotisserie chicken is perfect!)
  • 1 cup mayonnaise
  • 2 stalks celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • fresh dill or parsley, chopped (optional)

Instructions 

  • Whisk together mayonnaise, lemon juice, mustard, salt, and pepper until smooth.
  • Add chicken, celery, red onion, and optional herbs to the bowl.
  • Gently fold and toss until everything is coated.
  • Taste and adjust seasoning if needed. Chill for 30 minutes or serve immediately.
