Instructions
Sauté diced onions, carrots, and minced garlic in oil and butter until tender.
Add cubed chicken, spices, salt, and pepper; cook until browned.
Stir in rice and cook for 2 minutes.
Add chicken broth, bring to a boil, then reduce heat and simmer until rice is cooked and liquid is absorbed.
Garnish with chopped parsley and serve with pickles, tomatoes, and sour cream if desired.
Notes
For extra flavor, toast the rice before adding broth.
