A flavorful and easy-to-make chicken rice pilaf perfect for a quick dinner or lunch.

Ingredients

Protein

  • 1.5 lbs chicken breast or thigh; cubed
  • oil for frying oil (for frying)
  • salt and black pepper salt and black pepper

Dairy & Fats

  • 2 tbsp butter

Vegetables

  • 1 large piece onion (diced)
  • 3 medium pieces carrots (diced)
  • 6 cloves garlic (finely minced)

Spices

  • 1/2 tsp ground ground coriander
  • 1/8 tsp ground ground cumin
  • 1 tsp salt (add more to taste)
  • ground black pepper ground black pepper

Grains & Broth

  • 2 cups long-grain Basmati rice
  • 4 cups chicken broth

Herbs & Garnishes

  • 2 tbsp fresh chopped parsley
  • pickles and pickled tomatoes pickles and pickled tomatoes (for serving)
  • sour cream sour cream (for serving; optional)

Instructions 

  • Sauté diced onions, carrots, and minced garlic in oil and butter until tender.
  • Add cubed chicken, spices, salt, and pepper; cook until browned.
  • Stir in rice and cook for 2 minutes.
  • Add chicken broth, bring to a boil, then reduce heat and simmer until rice is cooked and liquid is absorbed.
  • Garnish with chopped parsley and serve with pickles, tomatoes, and sour cream if desired.

Notes

For extra flavor, toast the rice before adding broth.
