Ingredients

Protein

  • 2 pieces boneless skinless chicken breasts (Choose for quick cooking.)
  • 1 tbsp olive oil (Helps keep the chicken juicy.)
  • 2 cloves garlic (Minced for flavor.)

Grains

  • 1 cup couscous (Quick-cooking grain.)
  • 1 cup vegetable or chicken broth (Adds richness.)
  • 1 tsp lemon zest (For a fresh flavor.)

Star Ingredient

  • 2 tbsp basil pesto (Star ingredient.)
  • 1 cup cherry tomatoes (Halved for sweetness.)
  • 2 cups baby spinach or arugula (For crunch.)
  • 1/4 cup Parmesan cheese (Optional garnish.)
  • 2 tbsp pine nuts (Lightly toasted.)

Instructions 

  • Cook the chicken breasts in olive oil until golden and cooked through, about 6-8 minutes per side.
  • Meanwhile, bring broth to a boil, add couscous and lemon zest, then remove from heat and let sit for 5 minutes.
  • Shred the cooked chicken and toss with pesto, cherry tomatoes, spinach, Parmesan, and pine nuts.
  • Fluff the couscous with a fork and serve topped with the pesto chicken mixture.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
