A delicious and straightforward Chicken Parmesan that combines crispy chicken, fresh spinach, and flavorful tomato sauce, baked to perfection.

Ingredients

Protein

  • 3 pieces boneless, skinless chicken breasts (Pounded to one inch thick)
  • 1/4 cup flour
  • salt & pepper salt & pepper
  • 1 tbsp olive oil
  • 1 cup baby spinach leaves
  • 1 28 oz can oz diced tomatoes
  • 1 5.5 oz can oz no salt added tomato paste
  • 2 cloves garlic (minced)
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1 cup grated Parmesan cheese

Instructions 

  • Preheat oven to 350°F (175°C). Pound chicken to even thickness, season with salt & pepper.
  • Coat chicken with flour in a ziplock bag. Whisk together tomatoes, tomato paste, garlic, basil, oregano.
  • Heat oil in ovenproof skillet, sear chicken 2-3 minutes per side, then add spinach and tomato mixture. Top with Parmesan.
  • Bake in oven for 20 minutes until cooked through and cheese is golden. Serve hot.

Notes

Use fresh basil if available for extra flavor.
