A delicious and straightforward Chicken Parmesan that combines crispy chicken, fresh spinach, and flavorful tomato sauce, baked to perfection.
Ingredients

boneless, skinless chicken breasts
(Pounded to one inch thick)

flour

baby spinach leaves

diced tomatoes

no salt added tomato paste

grated Parmesan cheese
Instructions
Preheat oven to 350°F (175°C). Pound chicken to even thickness, season with salt & pepper.
Coat chicken with flour in a ziplock bag. Whisk together tomatoes, tomato paste, garlic, basil, oregano.
Heat oil in ovenproof skillet, sear chicken 2-3 minutes per side, then add spinach and tomato mixture. Top with Parmesan.
Bake in oven for 20 minutes until cooked through and cheese is golden. Serve hot.
Notes
Use fresh basil if available for extra flavor.
