A flavorful and cheesy taco casserole that's easy to prepare and perfect for a family dinner.

Ingredients

  • 1 tbsp taco seasoning
  • 1 tsp chili powder
  • 1 tsp oregano
  • 0.5 tsp garlic powder
  • 1 tsp cumin

cans and fresh produce

  • 1 can diced tomatoes
  • 0.5 cup salsa
  • 1 can black beans (rinsed)
  • 0.5 cup corn
  • 0.5 lb ground beef (85/15)
  • 0.25 cup diced onions
  • 1 each bell peppers
  • 1 optional seeded jalapeño pepper
  • 2 cloves minced garlic
  • 0.25 cup green onions
  • 1 cup sour cream
  • 1 cup cheddar cheese
  • 1 cup mozzarella cheese
  • 0.5 cup jalapeño pepper jack cheese (optional)
  • 0.25 cup sliced olives (optional)
  • as needed crushed tortilla chips
  • as needed flour tortillas

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cook ground beef until browned, then add diced onions, bell peppers, jalapeño, garlic, salt, and pepper; cook until veggies soften.
  • Stir in spices, diced tomatoes, salsa, corn, and black beans; cook briefly.
  • Layer tortilla chips in a baking dish, add meat mixture, then repeat with tortillas and remaining meat. Top with cheeses, sour cream, green onions, and crushed chips.
  • Bake for 30 minutes until cheese is bubbly and golden. Rest for 15 minutes before serving.

Notes

For extra spice, add more jalapeños or hot sauce.
