Ingredients

Meat and grains

  • 1 lb ground beef
  • 2 cups cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels

Vegetables and toppings

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon ground oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato sauce or crushed tomatoes
  • 2 tablespoons water or beef broth
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved or diced
  • 1/2 cup shredded cheddar or Mexican-blend cheese

Dairy and condiments

Instructions 

  • Cook rice according to package instructions; set aside and keep warm.
  • In a skillet, cook onion until translucent, then add garlic and cook briefly. Add ground beef, cook until browned, then stir in spices, tomato sauce, and water. Simmer for 5–7 minutes.
  • Warm black beans and corn separately. Assemble bowls with rice, seasoned beef, beans, corn, lettuce, tomatoes, and cheese. Top with desired toppings and serve with lime wedges.
