A quick and flavorful beef burrito bowl that's perfect for a satisfying meal. Loaded with rice, beans, vegetables, and cheese, it's easy to customize and enjoy.

Ingredients

Meat and Vegetables

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 medium red bell pepper, chopped
  • 1 cup long grain rice
  • 1 cup frozen corn
  • 15 ounces canned black beans, drained
  • 14.5 ounces canned tomatoes, diced or crushed with juice
  • 1 tablespoon olive oil
  • 2 teaspoons garlic, minced
  • 1 tablespoon tomato paste
  • 2 tablespoons taco seasoning
  • 2 cups low sodium chicken broth
  • 1 medium lime (juiced)
  • 1 cup sharp cheddar cheese, shredded

Instructions 

  • Heat olive oil in a skillet, sauté onions and garlic until translucent, about 3-4 minutes.
  • Add ground beef, cook until browned and no pink remains.
  • Stir in taco seasoning, rice, tomatoes, tomato paste, and chicken broth; bring to a boil, then simmer covered for 16-20 minutes.
  • Mix in black beans, corn, and bell pepper; cook for 4-5 minutes.
  • Remove from heat, squeeze lime juice over mixture, and stir.
  • Serve topped with shredded cheddar cheese.

Notes

For extra flavor, garnish with fresh cilantro or sour cream.
