A quick and delicious lunch featuring grilled chicken, creamy avocado, and crisp lettuce wrapped in whole wheat tortillas.

Ingredients

Protein

  • 1.5 lbs boneless (skinless chicken breasts, grilled then cooled 10 mins and diced)

Vegetables

  • 2/3 head Romaine lettuce (2/3 of 1 head)
  • 2 small avocadoes (peeled and diced)
  • 1 cup halved grape tomatoes

Dairy & Condiments

  • 1/3 cup finely shredded or shaved parmesan cheese
  • 2/3 cup fat-free plain Greek yogurt
  • 1/4 cup light-mayonnaise
  • 1 tablespoon olive oil
  • 3 fillets anchovy fillets (mashed finely to a paste (1 1/2 teaspoon paste))
  • 1.5 tablespoons fresh lemon juice
  • 2 teaspoons worcestershire sauce
  • 1.5 teaspoons dijon mustard
  • 2 small garlic cloves (pressed through a garlic crusher)
  • 2 tablespoons water (or as needed)

Seasonings

  • to taste Salt and freshly ground black pepper

Instructions 

  • Grill chicken breasts, cool, then dice.
  • Mix dressing ingredients: yogurt, mayonnaise, olive oil, anchovies, lemon juice, Worcestershire, mustard, garlic, and water.
  • Combine diced chicken, lettuce, avocado, tomatoes, and cheese in a bowl.
  • Add dressing to the mixture and toss gently.
  • Divide mixture among tortillas, roll up, and serve.

Notes

For extra flavor, chill the wraps before serving.
