Easy Asian Cucumber Salad

A refreshing and quick salad that combines the crispness of cucumbers with a flavorful Asian dressing.

Ingredients

Vegetables

  • 5 pieces persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/2-1 tbsp sugar ((see notes))
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic (minced) ((optional))

Instructions 

  • Rinse and slice cucumbers at an angle.
  • Sprinkle with salt and refrigerate for 20 minutes.
  • Drain and rinse cucumbers, then return to bowl.
  • Add remaining ingredients and stir well.
  • Serve and enjoy!

Notes

Adjust sugar to taste based on preference.
