This refreshing Caprese salad features ripe cherry tomatoes, creamy mozzarella, and fragrant basil, drizzled with a balsamic dressing.

  • 16 oz ripe cherry tomatoes
  • 8 oz mini mozzarella balls
  • 8 large fresh basil leaves
  • 1/2 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 2 dashes black pepper

Instructions 

  • Combine balsamic vinegar, olive oil, salt, and black pepper in a bowl and stir.
  • Rinse and drain mozzarella balls, then add to the bowl.
  • Rinse, dry, and halve cherry tomatoes, then add to the bowl.
  • Roll and slice basil leaves into ribbons, then add to the bowl and stir.
  • Adjust seasoning with salt and pepper to taste.
  • Drizzle with balsamic glaze just before serving.

Notes

For added flavor, consider using heirloom tomatoes.
