Ingredients

Rice and grains

  • 2 cups cooked rice (Use day-old rice for best texture)

Eggs

  • 2 large large eggs (Lightly beaten)

Vegetables

  • 1 cup carrots (Finely diced)
  • 1 cup green peas (Fresh or frozen)
  • 1 cup bell peppers (Colorful varieties)
  • 2 stalks green onions (Thinly sliced)

Aromatics and sauces

  • 2 cloves garlic (Minced)
  • 2 tablespoons soy sauce (Adjust to taste)
  • 1 tablespoon sesame oil (For cooking)
  • to taste salt
  • to taste pepper

Optional ingredients

  • 1/2 cup frozen corn ((Optional))
  • 1 teaspoon chili flakes (Optional, for heat)
  • 1 cup tofu or cooked chicken (Optional, for protein)

Instructions 

  • Heat sesame oil in a wok or large skillet over medium-high heat.
  • Add garlic and cook for 30 seconds until fragrant.
  • Push ingredients to the side, scramble eggs in the pan, then mix with vegetables and rice.
  • Stir in soy sauce, salt, pepper, and optional chili flakes or corn. Add protein if using.
  • Cook for another 2-3 minutes, then serve hot garnished with sliced green onions.

Notes

Use day-old rice for best texture and flavor. Feel free to customize with your favorite proteins and vegetables.
