  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions 

  • Place potatoes in boiling water with a pinch of salt; cook until fork-tender.
  • Drain and cool the potatoes completely.
  • Mix mayonnaise, sour cream, celery, onion, dill, mustard, vinegar, salt, and pepper in a bowl.
  • Add cooled potatoes to the dressing and gently fold to coat.
