A delicious baked dish combining tender chicken breasts with a creamy spinach and mushroom sauce, topped with Parmesan cheese.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Oil & Aromatics

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped

Vegetables

  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach, chopped

Dairy & Cheese

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Spices & Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Salt & Pepper

  • to taste Salt and pepper

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté garlic and onions in olive oil until fragrant and translucent.
  • Add mushrooms and cook until softened. Stir in spinach and season with salt, pepper, thyme, and paprika.
  • Place chicken in a baking dish, pour vegetable mixture over, sprinkle with Parmesan cheese.
  • Bake for 25-30 minutes until chicken is cooked and cheese is golden. Rest briefly before serving.

Notes

For a lighter version, use half-and-half instead of heavy cream.
