Instructions
Preheat oven to 375°F (190°C).
Sauté garlic and onions in olive oil until fragrant and translucent.
Add mushrooms and cook until softened. Stir in spinach and season with salt, pepper, thyme, and paprika.
Place chicken in a baking dish, pour vegetable mixture over, sprinkle with Parmesan cheese.
Bake for 25-30 minutes until chicken is cooked and cheese is golden. Rest briefly before serving.
Notes
For a lighter version, use half-and-half instead of heavy cream.
