Instructions 

  • Heat oil in a pan and sauté garlic, ginger, and curry paste until fragrant.

  • Add chicken, eggplants, and kaffir lime leaves; cook until chicken is done and vegetables are tender.
  • Stir in snow peas, Thai basil, lime juice, fish sauce, and sugar; cook for another 2 minutes.
