Ingredients

Dairy & Oils

  • 2 tablespoons Unsalted butter (adds richness)

Vegetables

  • 1 medium Yellow onion (minced)

Garlic

  • 3 cloves Garlic (minced)

Spices

  • 1 teaspoon Ground turmeric
  • 1 teaspoon Paprika
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder (adjust to taste)
  • 1 teaspoon Kosher salt

Canned Goods

  • 1 can Diced tomatoes
  • 1 can Coconut milk

Seafood

  • 1 pound Shrimp (cleaned and peeled)

Herbs

  • 1/4 cup Cilantro (fresh, for garnish)

Instructions 

  • Melt butter in a large skillet over medium heat.
  • Sauté minced onion and garlic until fragrant, about 2 minutes.
  • Add spices and cook for 1 minute to release their aroma.
  • Stir in diced tomatoes and coconut milk, then add shrimp. Simmer until shrimp are cooked through, about 5 minutes.
  • Garnish with chopped cilantro and serve hot.

Notes

For extra flavor, toast the spices before adding liquids.
