Ingredients

Pasta

  • 12 ounces whole wheat or gluten-free pasta

Chicken

  • 2 pieces chicken breasts (or thighs for added tenderness)

Oil

  • 2 tablespoons olive oil (extra virgin for bolder taste)

Salt and Pepper

Pesto

  • 1 cup basil pesto (homemade or store-bought)

Tomatoes

  • 1 cup cherry tomatoes (or sun-dried tomatoes)

Basil Leaves

  • 1/4 cup fresh basil leaves (optional)

Parmesan Cheese

  • 1/2 cup parmesan cheese (or nutritional yeast for a vegan alternative)

Instructions 

  • Cook the pasta according to package instructions until al dente, then drain.
  • While pasta cooks, season chicken with salt and pepper, then grill until cooked through. Slice into strips.
  • In a large bowl, combine cooked pasta, grilled chicken, basil pesto, cherry tomatoes, and basil leaves.
