A flavorful one-pan dish combining seasoned chicken, colorful peppers, and rice for a quick and satisfying meal.

Ingredients

Protein

  • 2 lbs boneless, skinless chicken breasts, cut into thin strips

Grains

  • 2 cups long-grain white rice, rinsed

Broth & Liquids

  • 4 cups low-sodium chicken broth

Spices & Seasonings

  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon cayenne pepper (optional for heat)

Vegetables

  • 1 large yellow onion, sliced
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 2 cloves garlic, minced

Additional ingredients

  • 1 cup corn kernels (frozen or fresh)
  • 1 cup black beans (drained and rinsed)
  • 2 tablespoons olive oil
  • 1 unit juice of 1 lime
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend, to taste)

Garnish & Serve

  • to taste Fresh cilantro, chopped
  • optional Sour cream
  • optional Sliced jalapeños

Instructions 

  • Season chicken with fajita spices and cook in a skillet until browned.
  • Add sliced peppers, onion, and garlic; sauté until tender.
  • Stir in rice and pour in chicken broth; bring to a boil.
  • Reduce heat, cover, and simmer for 15 minutes until rice is fluffy.
  • Fluff rice, garnish with cilantro, and serve with cheese, lime, and optional toppings.

Adjust seasoning and toppings to taste for best flavor.
