A refreshing and creamy salad combining crisp cucumbers, tangy Greek yogurt, and fresh dill, perfect for a light side dish.

Ingredients

Vegetables

  • 1 large English cucumber (thinly sliced)
  • 1.5 cups plain full-fat Greek yogurt
  • 2 tablespoons fresh dill (finely chopped)
  • 1 small garlic clove (minced)
  • 1 tablespoon fresh lemon juice
  • 0.5 teaspoon salt (or to taste)
  • 0.25 teaspoon black pepper (freshly ground)
  • 1 teaspoon olive oil (optional, for garnish)

Instructions 

  • Whisk together Greek yogurt, lemon juice, minced garlic, salt, and black pepper until smooth.
  • Slice cucumber thinly and let sit with a pinch of salt for 10 minutes, then pat dry.
  • Fold cucumber slices and chopped dill into the yogurt mixture until well coated.
  • Transfer to a serving dish and drizzle with olive oil if desired.
  • Chill for 15–30 minutes before serving for best flavor.

Notes

This salad is best served chilled and can be made ahead for a refreshing side dish.
