A refreshing and creamy cucumber dill salad perfect for summer gatherings.

Ingredients

Dressing

  • ¾ cup greek yogurt or plain full-fat
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon lemon juice
  • ¼ teaspoon garlic, grated
  • ½ teaspoon fine salt
  • teaspoon black pepper
  • 1 ½ lb cucumbers, sliced ((i used 2 long english cucumbers))
  • ½ red onion finely sliced
  • ¼ cup fresh dill, chopped

Instructions 

  • Mix yogurt dressing in a bowl until smooth.
  • Slice onion and cucumbers into thin slices.
  • Combine all salad ingredients in a bowl, add dressing, and toss.
  • Serve at room temperature or refrigerate until serving.

Notes

For extra flavor, let the salad sit for 30 minutes before serving.
