A refreshing and vibrant salad combining crisp cucumbers and carrots, perfect for a light meal or side dish.

Ingredients

Vegetables

  • 1 large cucumber
  • 2 large carrots

Dressing

  • 1 tbsp sesame seeds
  • 1 clove garlic (minced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp gochugaru (korean red chili flakes)
  • 1 tsp soy sauce
  • ½ tsp sugar (can substitute with maple syrup or agave)

Instructions 

  • Wash and julienne the cucumber and carrots into thin strips. Place in a mixing bowl.
  • Whisk together olive oil, lemon juice, gochugaru, soy sauce, and sugar in a small bowl.
  • Pour the dressing over the vegetables, add minced garlic and parsley, and toss to coat.
  • Sprinkle sesame seeds over the salad and toss again. Serve immediately or let sit for 10-15 minutes.

Notes

For extra flavor, let the salad sit for a few minutes before serving.
